I've always used Ultracal 30 (meaning it sets up in about 30 min) and had good luck with it. I always buy it in 50lb buckets---you'll use at least 1/2 to 2/3 of that on a mold. My first mold was ridiculously heavy (used over 3/4 of the 50lbs), which makes it a real pain to pour a cowl. This last one I use a bit over half a bucket, so it's quite a bit lighter.
I was buying it from plaster.com, which sells 50lbs for $26, and the shipping was only $15. But now that shipping has shot up to nearly $50, the cheapest I've found is monstermaker---about $30 plus $30+ for shipping.
I've heard about doing latex like that in silicone molds, Chiro. I'll have to give it a try one of these days.
